DIRECTIONS

Turn stove on medium heat and fill medium size pot or pan halfway with Smart Vegetable Oil. Make quarter inch slices of your Eggplant. In a large bowl whisk two Eggland's Best Eggs. In another later bowl add a half cup of Garlic & Herb Breadcrumbs. Take a Ziplock bag and add a handful of Texas Toast Garlic Croutons to it and seal the bag without any air in it. Crush the croutons until they are the consistency of the breadcrumbs and mix in with the breadcrumbs. Dip the Eggplant into the egg wash cover both sides completely and then into the breadcrumb crouton mix then place in the oil and let cook until golden brown on both sides. Remove from stove and drain on plate with paper towel. Season with Graces Jamaican Dry Jerk Seasoning.

 

Add one tablespoon of Smart Butter to a small pan and add Red Onion, Mazzetta Roasted Red Pepper & Grilled Artichokes. Sautee along with Grace Jamaican Dry Jerk Seasoning & Ground Black Pepper and remove from pan once lightly browned.

 

Slice up and season your Avocado with Grace Jamaican Dry Jerk Seasoning while lightly toasting your Rye Bread. Butter both sides of your toastd Rye Bread with Smart Butter. Add your  fried eggplant, sauteed red onion, roasted red pepper & grilled artichoke. Also add avocado, sauerkraut and Swiss Cheese. Top off with Russian Dressing slice in half and serve. Enjoy!
