SWEET POTATO & BRUSSELS SPROUT OMELET

DIRECTIONS

Cut up Sweet Potato into small squares and cook in boiling water until fork soft. Remove from stove, drain and place in bowl.

 

Pour two tablespoons of EVOO and a tablespoon of Smart Butter into a medium size pan and begin to sauté the Brussels Sprouts. Season with diced fresh rosemary, GJDJ Seasoning and Ground Black Pepper. Once Brussels Sprouts are fork tender add Sweet Potatoes, Marinated Mushrooms & Yellow Onion then cook until lightly browned. Add more seasoning if necessary.

 

In a small bowl whisk 1 whole egg and 1 egg white (you can do your eggs your way or substitute with Egg Beaters).

 

Remove Brussels Sprouts, Sweet Potatoes, mushrooms & onion and put into a bowl.

 

Add a tablespoon of Smart Butter to a medium size pan and then add the eggs. Once the eggs are cooked to your liking place the one slice Veggie Pepper Jack Cheese on one side of the omelet and then place the sautéed BS, SP, mushroom & onion over the cheese on the same side. Fold over the bare side of the omelet and remove from the pan and plate for serving. Add fresh Ground Black Pepper & Sea Salt. Enjoy! 

 

 

 

 

HOT & SPICY VEGGIE CHICKEN OMELET

DIRECTIONS

Dice Veggie Buffalo Chicken Nuggets, Red Onion and Grilled Artichoke. Pour tablespoons of EVOO into a medium size pan and begin to sauté the all three together. Season with GJDJ Seasoning and Ground Black Pepper and cook until lightly browned. Remove VBCN, Red oin & Grilled Artichoke from heat and put into a bowl.

 

In a small bowl whisk 1 whole egg and 1 egg white (you can do your eggs your way or substitute with Egg Beaters).

Add a tablespoon of Smart Butter to a medium size pan and then add the eggs. Once the eggs are cooked to your liking place the one slice Veggie Pepper Jack Cheese on one side of the omelet and then place the sautéed VBCN, Red oin & Grilled Artichoke over the cheese on the same side. Add the Italian Shreaded 4 Cheese Blend and fold over the bare side of the omelet, Remove from the pan and plate for serving. Add fresh Ground Black Pepper & Sea Salt. Enjoy!
